PB, ES&H Guru, and the Caribbean
OK Craig...after our talk today about what you can and can't eat (geez Shelly...this has to be really tough on you too!!!), here's some PB recipes that meet all your criteria, especially a couple breakfast ones. Trying to find ones without veggies or fruit ain't easy. Sooo...put some weight on...get your next week's dose of chemo...then 2 days later...sit on a beach on the Caribbean Sea...drink some cocktails (high octane thick beer is preferred to build up dem dare pecks)...and enjoy the next 10 days...and wear mirror sunglasses so Shelly doesn't think your looking at all the beach chicks.
On a better note...Krummrich's notorious ES&H Guru is here at our plant in Trenton. We're playing phone tag and meeting tag right now. Tom's here until Thursday. If it's determined that time is of the essence, I may have to do what I do for numerous coworkers of mine here at Trenton. When I pass our conference meeting room and see the zombie-like meeting-from-hell stare from one of my buddies, I wait 2 minutes...then page him/her. I don't get paid well enough for this unselfish generous act of mine. Sooo...if Tom doesn't get out of his meetings...the meetings will have to get out of Tom!
Another one of my trade secrets that works quite excellent (and you don't need a Pager Partner for this) is just sorta jump up in your seat (like you've been electric-shocked) at the conference room table, stare at your pager (the beauty of vibrate), pretend to push the button, and take a break for a tad to rid your zombie meeting demons. It works...and who's the wiser??...OOOPS!!!

Peanut Butter Pancakes
1) 1¼ cups flour
2) 2 tablespoons sugar
3) 2½ teaspoons baking powder
4) ½ teaspoon salt
5) 1¼ cups milk
6) 1 egg
7) ¼ cup peanut butter
8) 3 tablespoons butter, melted
Combine flour, sugar, baking powder and salt. Beat milk with egg and peanut butter until smooth. Add to dry ingredients and beat just until well moistened. Lightly butter hot griddle. Spoon by ¼ cupfuls onto griddle. Cook until golden brown on both sides.

Peanut Butter Omelette
1) 3 eggs per omelette
2) Milk (about 2 tbsp per omelet)
3) Peanut Butter
4) Waxed Paper
20 to 30 minutes before you are going to cook the omelets, spread peanut butter on the wax paper about 1/4" thick making 2 to 3 inch patties (1 for each omelet). Cook the omelet as you normally would, but just before folding, peel the peanut butter from the waxed paper and place in the omelet.
PEANUT BUTTER CHICKEN
1) 1 egg, slightly beaten
2) 1/3 c. creamy peanut butter
3) 1 tsp. salt
4) 1/8 tsp. pepper
5) 1/3 c. milk
6) 8 chicken drum sticks (or thin chicken breasets)
7) 1 c. fine dry bread crumbs
8) 1/4 c. Mazola corn oil
Mix together egg, peanut butter, salt and pepper. Gradually add milk, beating with a fork to blend. Dip chicken in egg mixture; then add in crumbs. Place in oiled 13 x 9 x 2 inch baking pan. Sprinkle remaining corn oil over chicken pieces. Bake in 375 degree oven for 45 minutes or until chicken is tender. Serves 4 (or in this case...just Craig!!).
